I always seem to have chicken either in the fridge or the freezer. Coming up with new ways to cook it used to be a challenge. I have come up with quite a few meals that my family enjoys immensely. Bacon Wrapped Thighs with Pasta

I find that wrapping the thighs in slices of bacon adds a great flavor to them. I usually wrap two uncooked slices around each chicken thigh and place the thighs in a baking dish. Bake for about 45 minutes covered and then bake for about 15 minutes longer with the foil off. I serve these alongside pasta with red sauce.
Stir Fry

Most people like to use beef in their stir fry. Our local grocery store even has beef already cut up into the perfect sized cubes for making stir fry with it. My husband is only supposed to have red meat once a month, so we make most of our meals with chicken. I actually prefer chicken stir fry over beef stir fry. Cook the chicken thoroughly, add in the veggies and cook a bit longer, then put everything over some basmati rice.

Fried Chicken and Baked Potatoes

This is a meal that never gets grumbles. I think my family would each fried chicken for a week and still not complain. The only thing I don't like is preparing the chicken to get ready to fry and the frying process. What a mess! I even have a fryer with a lid, but the splatters just can't be avoided. At least making baked potatoes aren't messy and they can be topped with shredded cheese, sour cream, bacon bits, and butter fairly easily.
Curry and Rice
I've never made this from scratch, since there are plenty of curry mixes sold at the grocery store that are simply amazing. They have the perfect amount of spices and such, so all I have to do is add the chicken and cook up some rice for it all to go with. There are also mixes with varying degrees of spiciness, which means I can easily make a batch from my husband and one for the boys and me, since we don't all enjoy the same level of spiciness in our food.
Chicken and Noodles
Skinless, boneless, chicken breasts usually work the best for this meal. Boil the chicken until it starts to fall apart and add whichever types of spices you want. Once the chicken is completely cooked, throw in some noodles to cook in the same water the chicken is in. If there isn't enough water for noodles, then you'll need to add more and bring it to a boil before adding noodles. When the noodles are fully cooked, pour the chicken and noodles over some mashed potatoes and enjoy.

Oven BBQ
I like to use thighs and legs for making BBQ chicken in the oven. Let the pieces set in some BBQ sauce of your choice for about 30 minutes before baking. This allows some of the flavor to be absorbed into the chicken. I usually cover the baking dish with aluminum foil, since BBQ sauce has a tendency to burn easily. It takes about an hour to cook BBQ chicken in the over, but it is well worth the wait. I like to serve this with some potato salad or macaroni salad.
Chicken Quesadillas
This meal can be made with canned chicken or you can cook chicken however you like best and then cut it up into pieces. Using canned chicken makes this one of the quickest meals ever to make, but the flavor is very mild. When I use chicken that needs to be cooked first, I often cook chicken breasts in a skillet with lots of spices and then cut these into long strips. Place a 10 inch tortilla on a microwave safe plate, sprinkle some shredded cheese on the tortilla and top with chicken pieces. Cook the combination for about a minute and then roll and eat.
