Tuna Noodle Casserole

This is a winter-time favorite, warm and delicious and satisfying. All you need is one package of egg noodles, cooked and drained, two big cans of tuna, drained, and two cans of cream of mushroom soup and one can of milk. Mix everything together in a big baking dish, sprinkle with your choice of shredded cheese, and bake at 350 for 8 minutes. Yummy!
Tuna Pasta Salad

This is the warm-weather version of the tuna noodle casserole, perfect for picnics and cookouts. Cook and drain shell-shaped pasta, then toss it with three tablespoons of mayo, one large can of tuna, and a half-cup of a combination of your choice of diced pickles, onions, and celery. Sprinkle the top with fresh ground pepper.

Salmon Patties

Looking for a simple way to add fish to your diet? Try these tasty, easy salmon patties… all you need is the buns! Mix together 15 ounces of canned salmon, 1 small diced onion, 1 small diced stalk of celery, 1 large egg, 2 tablespoons of Dijon mustard, 2 cups of breadcrumbs, and 1 tablespoon of parsley. Mix everything together really well, then shape into patties. Fry in olive oil for about fifteen seconds on each side, then bake them at 450 degrees for about 15 minutes, until the patties are cooked though. So yummy!

This is a classic, and it’s so easy to make it at home! To make the batter, whisk together a cup of flour, 1 cup of beer, and two teaspoons of salt. Coat strips of fresh cod in the batter, then deep-fry them in vegetable oil, and in a separate pan, fry some russet potato strips. Sprinkle both, generously, with salt, vinegar, or lemon, and enjoy!
Grilled Salmon

This is one of my summer-time favorites! Sprinkle a fresh piece of salmon with fresh ground pepper and a little sea salt, then wrap it in tin foil and grill for about 15 minutes, until the fish is cooked through and the edges are a little crispy. Serve with white rice and grilled asparagus and red-skin potatoes… delicious!

I’d enjoyed tapenade at dinner parties for years before realizing it contains anchovies, but by then I was so in love with it, I didn’t care what it was made of. Here’s how you make it: use a food processor to combine 1 cup of chopped green olives, 3 anchovy fillets and 1 tablespoon of capers. Scrape the mix into a small bowl, then stir in 3 tablespoons of olive oil and 1 teaspoon of Cognac. Serve at room temperature on little melba toasts. Divine!

Woo-hoo! I love clam chowder, and it’s not hard to make. Combine 1 teaspoon of vegetable oil and ½ cup of chopped cooked bacon, 1 cup each of chopped onion, celery, carrot, and bell pepper, and sauté for about 15 minutes. Then add ¼ cup of flour, 2 tablespoons of tomato paste, then 6 cups of clam juice and 2 large diced potatoes and 1 small diced tomato. Simmer for 15 minutes at low heat, then add 2 cups of chopped clams and cook for about another ten minutes. Serve with a crusty white bread… tasty
