- 1/3 cup light corn syrup
- 1/4 cup (1/2 stick) butter or margarine
- 1 teaspoon vanilla extract
- Additional whipped cream for garnish

How to Make Cranberry Coulis
Place the cranberry sauce, cranberry juice cocktail, and lime juice in a blender and cover. Blend until the mixture is completely smooth. Refrigerate the coulis until you are ready to serve. This recipe makes approximately 1 3/4 cups.
How to Make the Chocolate Pate
1. Line an 8 x 4-inch baking pan with plastic wrap. In a small bowl, whisk together 1/4 cup of the whipping cream and the egg yolk.
2. In a heavy-duty medium saucepan, combine the chocolate morsels, corn syrup, and butter. Melt over the lowest possible heat. When the morsels begin to melt, remove from the heat and stir. Return to the heat for just a few seconds at a time, stirring until the mixture is perfectly smooth. Remove from heat.
3. Add the cream and egg yolk mixture to the saucepan. Cook over medium heat, stirring constantly, for 1 minute. Let the mixture cool to room temperature.
4. In a small mixer bowl, beat the remaining whipping cream and vanilla extract until soft peaks form. Using a rubber spatula, gently fold the chocolate mixture into the whipped cream. Pour the final mixture into your prepared pan and cover with plastic wrap. Refrigerate overnight or freeze for 3 hours.
