Vegan Banana Peanut Butter Ice Cream

When it comes to diet desserts this one totally wins me over. Ice cream is my diet’s Kryptonite. It gets me every time. No matter how full I feel, I always have room for ice cream. Unfortunately it is loaded with fat and the sugar free or fat free versions don’t usually have the taste I’m looking for. You can do amazing things with frozen bananas and peanut butter though! Ingredients: 2 Bananas 1 Tbsp Creamy Peanut Butter (That’s it! How simple!) Directions: Peel your bananas and slice them into disks. Spread the slices out on a wax paper covered plate and pop them in the freezer for 2 hours. Blend the frozen banana slices and peanut butter in a food processor or blender until the mixture is creamy. You can eat it as is or pop it back into the freezer until it’s the consistency you would like. YUM! Source: fitsugar.com

Diet Coke Brownies

If you thought the last recipe was easy, just wait! These surprisingly delicious brownies only call for TWO ingredients! Brownie mix and a can of Diet Coke. This sounded bizarre to me the first time I ever heard of it, but having tried it out I can tell you it tastes incredibly delicious. Not only is it chocolaty yumminess, but it cuts out the eggs and oil you would normally have to add to brownie mix! Ingredients: 1 Box family size Low-Fat brownie mix (I used Betty Crocker) 1 Can of Diet Coke Directions: Empty your brownie mix into a bowl and pour the can of soda on top, allow the foam to settle and stir it up thoroughly. Pour your brownie batter into your lightly greased 9x13” pan and put it in your preheated 350 degree oven. If you cut them into 24 even pieces, they are only a ½ gram of fat each and 105 calories! Pineapple Sorbet

If 2 ingredients are still too much, try this extremely simple sorbet. All you need is a can of pineapple, a freezer and a blender! This is such a satisfying treat when it’s hot out but you don’t want to wreck your healthy eating habits by digging into the ice cream. It cools you off and tastes phenomenal! Ingredient: 1 20oz Can of Pineapple Chunks (packed in their own juice) Directions: Pour the entire can of pineapple into a freezer bag and leave it in the freezer for several hours (or overnight). Easy Cobbler

Here’s another diet soda recipe that’s really yummy. You can use any berries (or even peaches) to make whatever type of fruit cobbler you desire! I love to keep things simple and this one is definitely very easy to make. Once you try this, you’ll wonder why you haven’t been baking with soda all along! Ingredients: 2 12oz Bags of Frozen Fruit 1 Box White Cake Mix (Just the powder) 1 to 1 ½ Cans of 7Up or Sprite Directions: Spread the frozen fruit out in a 9x13” baking dish. Sprinkle the cake mix over the top, covering all of the berries as evenly as you can. Pour the soda over the top, making sure that all of the cake mix is moistened, but DO NOT STIR. Bake in a preheated 350 degree oven for 45-50 minutes or until berries are fully cooked. You will love this simple cobbler!
