Spinach Pesto Spread

This is one of my favorite low fat yet tasty sandwich spreads. I just take a focaccia or crusty bread and combine this spread with fresh tomatoes. It tastes heavenly when it is cold. All you need to do is blend spinach, basil leaves, garlic, grated Parmesan cheese and olive oil and your spread is ready.

5

Cilantro Sandwich Spread

This recipe is perfect if you are yearning for some Southwestern flavor in your sandwiches. This spread combines the flavors of cilantro, garlic, cumin, green chili, lemon, salt and pepper. Just combine all these ingredients in the blender and add enough water to make it smooth.

UPD:

To make your cilantro sandwich spread burst with freshness, take a handful of fresh cilantro leaves and some roughly chopped garlic cloves. For a hint of warmth and earthiness, ground cumin is a must; it complements the zesty kick of a finely diced green chili. Squeeze the juice of a ripe lemon to give your spread that essential citrus note which enlivens all the other flavors. Season with a pinch of salt and freshly ground black pepper to taste. Blitz everything until creamy. If you find the texture too thick, drizzle in water slowly until you reach your desired consistency. Enjoy this vibrant spread on your favorite whole grain bread or as a dip for raw veggies!
