10 Most Delicious Pancake Recipes ...

I love pancakes! What can be better than inventing new recipes, and trying to flip pancakes which invariably get stuck to the ceiling, the floor and the sink? They taste divine, too, and if you watch what you put on the top, they can be low calorie too! I’ve already searched out my top ten toppings, how about giving them a try?

Basic Pancake Recipe

This is the basic recipe which you’ll adapt for the rest of the recipes!
You will need:
1 ½ cups of flour, 2 tablespoons of sugar, 2 teaspoons of baking powder, ½ teaspoon of baking soda, ½ teaspoon of salt, 1 ½ cups of milk, 2 eggs, 2 tablespoons of vegetable oil and 1 teaspoon of vanilla essence...mmmm!

What to do: These are so easy to make! To start, grab a mixing bowl and add all of the dry ingredients. Dig a well in the centre, and pour the milk into this. I find it easier to add the milk a little at the time, it mixes better with the flour like that! Add the eggs, vanilla and oil, and mix until it forms a lumpy batter, which you can pour into your saucepan! How much to use depends on how thick you want your pancakes. Use about a 14 of a cup for small pancakes, or ½ a cup for an average sized pancake! When the mixture starts to bubble, and is golden brown underneath, flip it over and wait for it to brown on the other side. Once it’s brown on both sides, you can test it! If you think it’s too thin, add more flour, and more milk if it’s too thick. If you just want plain pancakes, you can sprinkle sugar and lemon juice, and enjoy the basic recipe! If you are looking for something a bit different, here are my favourite ideas...

Blueberry Buttermilk

You will need:

The basic ingredients, 3 tablespoons of melted butter, and a cup of blueberries

What to do: Follow the recipe above, but before you add the milk, add the butter to it in a separate bowl. Then add the buttermilk together, exactly as you would above. Once you’ve made the batter, fold in half the blueberries. Then add the rest as you cook the pancakes...bare in mind that the second side won’t take nearly as long as the first, and that the blueberries you add to the uncooked mixture will bleed a little. If you’d rather they didn’t, add them all to the cooking mixture instead.

Ultimate Buttermilk

You will need:

The basic ingredients, one tablespoons of lemon juice, vinegar, and one cup of whole milk.

What to do: Making buttermilk is really easy! If you want basic buttermilk, just follow the recipe above, and mix melted butter with a cup of milk. For ultimate buttermilk, take a cup of whole milk and add the tablespoon of lemon juice and vinegar. Mix it all up and you should notice it thicken a little. Then use this mixture instead of the milk in the basic recipe for gorgeous, thick pancakes. Sprinkle with sugar for the ultimate treat!

New Hampshire Maple Syrup Pancakes

You will need:

1 cup of flour, 1 ½ teaspoons of baking powder, 1 tablespoon of real maple syrup, 1 beaten egg, 1 ¼ cups of milk, 3 tablespoons of melted butter

What to do: These are made with slightly different quantities of ingredients, because they are meant to be thinner. Start by sifting together the flour and baking powder in a bowl. In a separate bowl, add the maple syrup, egg and milk, and mix together. Slowly add liquid mixture to the dry mixture, and mix together. Add the butter, and extra milk if necessary, to create a thin batter. Pour the mixture into a pan, and wait for it to turn golden on both sides. Now they are ready!

Banana and Walnut Pancakes

You will need:

1 ½ cups of flour, 1 ½ teaspoons of baking powder, 1 ½ teaspoons of baking soda, ¼ teaspoons of salt, 1/8 teaspoon of cinnamon, ½ cup of soya milk, 1 teaspoon of vinegar, 1 tablespoon of canola oil, 1 teaspoon of vanilla, 3 small bananas, ½ cup of walnuts.

What to do: This one takes a bit of preparation. First mash the bananas in one bowl, and chop the walnuts in another. Then mix the soymilk and vinegar in another bowl, and let this sit for five minutes. Add together the flour, baking powder, baking soda, salt and cinnamon in a bowl, and mix together. Then add all of the wet ingredients to the banana bowl, mix and slowly pour this mixture into the dry ingredients. Fold in the walnuts. Cook until both sides are golden brown, and serve with chopped bananas and maple syrup. Gorgeous!

Oatmeal Pancakes

What you’ll need:

1/3 cup of oatmeal, 1/3 cup of egg whites, ½ tsp of baking powder, ½ tsp of vanilla extract, cinnamon to taste!

What to do: Mix together everything in a bowl, and add mashed banana if you want too. Once you’ve got a batter, scoop out a ball, and put it in a pan, and use a wooden spoon to flatten it into a disc. When you can move it in the pan, it’s time to flip it, and bronze the other side. Once its cooked, choose your toppings! Fresh fruit, syrup, peanut butter...the choice is yours!

French Style

What you’ll need:

The basic ingredients, with vanilla ice cream and chocolate sprinkles and sauce.

What to do: This is an easy take on the basic recipe, but it always impresses! Follow the basic recipe, but as soon as your pancakes are cooked, fill them with vanilla ice cream and a sprinkle of chocolate curls and sauce. Then quickly fold the pancake over, and stick it with maple syrup or chocolate sauce. Put it on a plate and make a few more... these will be the favourites!

Apple Puree and Brandy

What you’ll need:

The basic ingredients, apple puree, brandy and sugar.

What to do:

Again this is a pretty simple variation on the

basic recipe, but one that is sure to impress

! Follow the basic recipe, adding a few splashes of brandy if you want to make alcoholic pancakes! Once they are cooked, fill them with apple puree while they are still hot, and fold the pancake over, to make a little parcel. Stick with brandy, and sprinkle with sugar. The perfect party snack!

Picnic Pancakes

What you’ll need:

The basic ingredients, strawberries and cream.

What to do:

Make the basic ingredients, and when they are cooked, fill each pancake with small strawberries and pour cream over. Then wrap the pancakes up, and wait for them to cool. I prefer to slice my strawberries up, to make them easier to eat, and to sprinkle sugar over the top. I’ve got a very sweet tooth, though!

Something Fancy

What you’ll need:

1 cup of ricotta cheese, ¾ cup of flour, ½ teaspoon baking powder, 1 ½ teaspoons of sugar, pinch of salt, ¾ cup of milk, 3 eggs, with the yolks and whites separated, ½ teaspoon of vanilla essence, butter, powdered sugar, lemon curd.

What to do: Combine the flour, baking powder, sugar and salt in a bowl. In another bowl, mix together the cheese, milk, egg yolks and vanilla. Beat the egg whites until they form stiff peaks, and pour this over the ricotta mixture. Stir until they combine a bit, and fold in the egg whites. Lightly butter a frying pan, and pour in a 1/3 of a cup of the mixture. Cook until each pancake is golden brown on both sides. When the pancakes are cooked, quickly apply lemon curd to one side, and stick them together to make sandwiches. Then sprinkle with sugar.

I love pancakes, and I’m always trying new recipes... I can’t wait for pancake day, to stock up on ingredients! This sounds like the recipe I use for my homemade pancakes. I also mix in chopped apples, or other fresh berries, which makes them real yummy.
