Taleggio
A rich semisoft cow's milk cheese that comes from Italy's Lombardy region (northern middle Italy: Milan is in Lombardy). Depending on its age, the taste can vary from mild to pungent. A young taleggio is pale yellow and an older taleggio is a deep yellow with a runny texture. It's sold in both flat blocks and cylindrical shapes covered in wax or a thin mold.
This Italian website - Dovetusai - has some lovely bits and pieces and I see they sell Brown Bags. When I was in New York at an exhibition last year I was talking to the owner of this company and she was showing me her wares.
