9 Best Ideas for Sandwiches ...

Sandwiches are an excellent option for a quick snack, especially if you have a lot of people to feed. You can get fairly creative with sandwiches and there’s no limit to what you can put on them. Having kids, I’ve come up with quite a few varieties, but here are my 9 best ideas for sandwiches. You might already recognize a few. Hopefully at least a couple of them are new to you and you’ll enjoy trying them.

Egg Salad

I know this is probably one of the plainest sandwiches around but not the way I make it! First of all, I toast the bread and have it ready for when I get the egg mix made up. Take 8 hard boiled eggs, peel and mash them in a bowl with a third cup mayonnaise and a third cup of plain yogurt. I chop up about 3 tablespoons of bread and butter pickles, as well as half an onion. Sprinkle in some salt and pepper to suit your taste and stir everything together. When I make these for the kids I cut them into 4 triangles or use a giant flower shaped cookie cutter for the bread before I put the egg mix on it.

There are so many excellent combinations that can be created with peanut butter. I’ve used hazelnut spread, marshmallow fluff, or bananas and honey. I’m sure if I let them, my kids would gladly try to add all of these to a single sandwich. If I feel like getting out the electric sandwich maker, then I’ll put one of these peanut butter combinations in it and seal the edges. It turns it into sort of a dessert and they are the perfect tiny triangle sandwich for small hands.

Most people cringe when you say the word ‘sprouts’, but they are excellent for you and don’t really taste like anything. They are a better filler than lettuce and healthier too. I slice up some tomatoes into long pieces and put them in the pita pocket with the sprouts. For a topping, I really like poppy seed dressing. The kind I use is a fantastic neon green color and it looks great against the bright red tomatoes.

My oldest son loves to heat carrots with hummus as a snack, so I decided to make it into a sandwich one time. It turned out very well, if I do say so myself! I shredded the carrots so they would mix better with the hummus. I smeared all of this on one half of a toasted bagel and added a dollop of sour cream to the top of the sandwich half. For some additional color, I sprinkled some freshly minced chives to the top of the sour cream.

Sometimes I find bread to be too filling. I like to take some deli sliced ham or turkey and smear some cream cheese in it. I then lay the sliced meat on top of a leaf of lettuce and roll everything up as tight as possible. These are great finger food for parties. If you don’t have cream cheese, then try cutting up cheese into long skinny strips and placing these in the middle of each slice of meat. You might need a toothpick to keep the lettuce from unrolling.

Grilled Tomato and Avocado

I like to use whole wheat bread for this sandwich, since it seems to hold up better when placed on a hot and buttery griddle. For one sandwich, I use a third of an avocado and one Roma tomato. Slice the avocado and the tomato, and then place the slices on one piece of bread. I find that alternating the layers of tomato and avocado provides an even taste of both ingredients in each bite. I sprinkle pepper and some freshly cut basil leaves throughout the sandwich as I’m layering ingredients. After placing the other slice of bread on top, I butter one side and place the sandwich butter-side down on a hot griddle. Do this until the bread is nicely toasted and flip it over for the same treatment on the other side.

Eggplant and Provolone

There are two methods for this sandwich and both are yummy. The first method for preparing the eggplant is to cut it into cubes and cook it with some butter and garlic. After the butter seems to be somewhat absorbed, add some water and continue cooking the eggplant. Eventually it will be soft enough to mash like potatoes. The other method is to slice the eggplant width wise, so it’s in thick circles, and bake these slices with some garlic powder sprinkled on top. They have to bake for 12 minutes on each side at 450 degrees. Smear or pile the eggplant on the bread, sprinkle some salt, pepper, and garlic powder on the eggplant, and then add a slice or two of provolone cheese. You can toast the bread first or put the whole thing on a griddle if you want to.

Cucumber and Cheese

These are best made into sandwiches that are so small that they might be considered bite-sized for some people. Take one cucumber and peel it. Cut it in half and clean out the seeds as well. The seeds make most people burp constantly, so it’s often best to remove them. I prefer to add take cream cheese and mix it with some chives or onion powder. If you don’t have cream cheese, then thinly sliced farmers or Muenster cheese works well too. Make sure to slice the cucumbers as thin as possible too. Place all these on slices of bread, wheat or white, and then cut the crust off of it. Once the crust is removed, cut each sandwich into four squares. I learned to make this from my grandmother. She loves these things!

Hot Cabbage and Mozzarella

These are a favorite with just about everyone I’ve ever shared the recipe with. Most people grimace when you mention cabbage on a sandwich, but this is the tastiest sandwich ever. Cook the cabbage in a small amount of butter. There is enough liquid in cabbage that you shouldn’t have to add very much and you don’t have to put any water in the skillet either. Mash up a vegetable or chicken flavored bouillon cube and cook this in with the cabbage and butter as well. Once the cabbage is cooked, sprinkle lots of mozzarella on top and let it melt completely. Slice a loaf of French bread in half and toast the insides before adding the cabbage mixture to the bread.

I think sandwiches are fun to make. I have yet to come across someone that truly dislikes eating or making them.
